SCOPE OF JOB

The scope of this role is to assist the Head Chef while supervising the kitchen team. The sous Chef is responsible to manage and organize all requirements for the smooth and efficient operation of all kitchen activities, in accordance with the standards of operating procedures.

Reports to:

Head Chef

Main responsibilities:

·         Determine food inventory stocking, storing, and ordering needs

·         Supervise and motivate all kitchen stations and levels

·         Create and execute high quality menu items as per recipe cards

·         In the absence of the Executive Chef, direct the food preparation process of all sections ensuring all food is prepared with the highest quality timely and consistently

·         Inspect and report to Executive chef, all kitchen areas for appropriate maintenance to ensure a safe work environment

·         Ensure HACCP and Health & Safety policies and procedures are implemented and maintained

·         Always follow standards of operating procedures

·         Attend job specific trainings to further improve skills & knowledge

·         Attend team briefings and communication meetings

Level of Experience

·         At least 4 years’ experience in similar position in 5* Restaurants or Hotels

·         Culinary Degree for the relevant position

·         Awareness of Control of Substances Hazardous to Health Regulations (COSHH)
